This Christmas, our Saint Lucian inspired restaurants are balancing the warming flavours of the Caribbean with traditional festive spices in a mouth-watering three course menu.

Get into the Christmas spirit with our warming mulled wine pear salad, comforted by crusted goat’s cheese. Made to be truly tender, our 9-hour braised shin of beef stirs the soul, pairing cocoa beer herb dumplings with classic winter vegetables.

For a satisfying savoury finish, look no further than our selection of market cheeses with cocoa nib oatcakes. Rich with seasonal fruits and spices, contrasting desserts include white chocolate cheesecake, homemade sorbets and Caribbean black cake with cocoa nib ice cream and praline mousse.

Our resident mixologists will be shaking up a storm in Rabot 1745 and Roast+Conch behind our cocoa-region rum bars, concocting a merry medley of refreshing cocktails.
