A special recipe used by our chefs in our Boucan restaurant in Saint Lucia – extra-virgin olive oil rounded by rich notes of cocoa nibs and beans, with a kick of red chilli.

Shake to wake the chilli flakes, then drizzle and dress lightly over chicken, fish, pasta, pizza and roast vegetables. Try crushing the cocoa for some fabulous bread-dipping.

    Although it's described as a finishing oil, my main use for this has been in beef mince dishes as a substitute for cooking oil. It lends lasagne and chilli con carne a wonderfully rich note, making them the ultimate comfort food and now one of my (not so) guilty pleasures.

  • Really lovely!

    This oil is great for experimental cooks like me. I have used it in stir fries, salads and fajitas to great effect. You only need a little bit, so the bottle lasts ages. Would make a great gift for that hard to buy for person. Highly recommended!
