Description

Tender roasted cocoa nibs soaked in Italian balsamic vinegar, creating a rounded flavour that's fabulous on avocado, tomatoes, roast meats, in casseroles or gravy. Or simply pour with a little olive oil for excellent bread-dipping.

  • A peculiar incident with roast meat

    I was initially skeptical about a cocoa balsamic, but being ever the culinary experimentalist I was keen to add this somewhat novelty item to my inventory. But now, on avocado toast, this condiment fills my brunch with delicate wisps of sour sweet heaven. There is, however, a matter of tender roasted cocoa nibs. When paired with a roast meat (as recommended in the description, and by my local chocolatier) I found that the nibs undertook a different flavour, namely, one of a fermented sock. At first I feared I had made a grave culinary error, and so I tried my recipe again. Alas, more fermented sock. Thus, I will not be pairing with roasted meat AGAIN. That is it.
